Peel and slice the potatoes into thin rounds. Rinse and set aside.
Dice the onion finely. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Add the onion and sauté for about 5 minutes until translucent.
Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 10 minutes. Season with salt and pepper.
In a large bowl, beat the eggs and add the parsley. Stir in the cooked beef and onion mixture along with the sliced potatoes. Make sure everything is well combined.

Once the bottom is golden brown, carefully invert the tortilla onto a plate and then slide it back into the skillet to cook the other side, about another 8-10 minutes.
Once both sides are cooked and golden, remove from heat. Let it cool slightly before slicing.
