Preheat your oven to 350°F (175°C).
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add one chopped onion and sauté for about 5 minutes until softened.

Add in the 2 pounds of chicken, cut into bite-sized pieces. Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook until the chicken is browned, about 10-15 minutes.
In a large bowl, combine the sautéed chicken, 1 pound of green beans, and 1 can of cream of mushroom soup. Mix well to coat everything evenly.
Transfer the mixture into a greased baking dish and spread it evenly.
Sprinkle 2 cups of shredded cheddar cheese on top.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
Let it cool for a few minutes before serving.
