Begin by slicing the sausage into bite-sized pieces. Chop the onion and bell pepper.
In a skillet, heat 2 tablespoons of olive oil over medium heat, about 2 minutes.
Add the sausage and cook until browned, approximately 5 minutes, stirring frequently.
Incorporate the chopped onion and bell pepper to the skillet and sauté until softened, about 5 more minutes.
Meanwhile, crack the eggs into a bowl. Add salt and pepper, and whisk until well combined.
Once the vegetables are tender, pour the egg mixture over the sausage and veggies in the skillet. Cook without stirring for about 3-4 minutes until the edges begin to set.
Gently lift the edges with a spatula and tilt the skillet to let the uncooked eggs flow underneath.
After about 5-7 minutes, sprinkle the cheese evenly over one half of the tortilla filling. Use a spatula to fold the other half of the tortilla over the cheese.
Let it cook for another 2 minutes to allow the cheese to melt.
Once done, slide the tortilla onto a plate, slice into wedges, and serve hot.
