Start by prepping your ingredients: rinse the shrimp under cold water and pat dry. Slice the bell peppers into thin strips. Mince the garlic and chop the green onions.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, but do not let it burn.
Next, add the shrimp to the skillet. Cook for about 3 to 4 minutes, flipping occasionally, until they turn pink and opaque.
Once the shrimp is nearly cooked, add the sliced bell peppers to the skillet. Stir-fry them together for about 2 to 3 minutes until the peppers are slightly tender yet still crisp.
Drizzle 2 tablespoons of soy sauce over the shrimp and peppers. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir well to combine all flavors and let it cook for an additional minute.
