Start by marinating the chicken thighs. In a bowl, combine 6 tablespoons of soy sauce, 2 tablespoons of mirin, and 2 tablespoons of sugar. Mix well until the sugar is dissolved.
Grate or finely mince 1 clove of ginger and 2 cloves of garlic, and add them into the marinade mixture. Stir to combine.
Add the chicken thighs into the marinade. Cover the bowl and let it marinate for at least 15 minutes in the refrigerator.
While the chicken is marinating, prepare your garnish. Thinly slice 2 stalks of green onion for garnish.
After 15 minutes, heat a pan over medium-high heat. Add the marinated chicken thighs to the pan, reserving the marinade.
Cook the chicken for about 5–7 minutes on each side or until fully cooked and golden brown.
Pour the reserved marinade into the pan and bring it to a simmer for another 5 minutes until the sauce thickens slightly.
Once cooked, remove the chicken from the pan and let it rest for a few minutes before slicing.
Serve the chicken with the thickened sauce drizzled over the top and garnish with sesame seeds and the sliced green onions.
