Spice up your dinner with a unique twist on traditional Pad Thai that’s quick, easy, and delicious!
Soak the rice noodles in warm water for about 15 minutes until they are soft, then drain and set aside.
Cut the hot dogs into bite-sized pieces.
In a large frying pan or wok, heat a tablespoon of oil over medium-high heat. Add the hot dog pieces and stir-fry for about 5 minutes until they are lightly browned.
Push the hot dogs to the side of the pan and crack the eggs into the pan. Scramble the eggs for about 2 minutes until fully cooked.
Add the soaked and drained rice noodles to the pan and mix everything together. Stir in the fish sauce, sugar, and chili powder, and cook for an additional 5 minutes, mixing well.
Add the bean sprouts and sliced green onions to the pan, and toss everything together. Cook for 2 more minutes.
Remove from heat and serve hot, garnishing with chopped peanuts and lime wedges.
