Orzo e Verdura is a healthy and tasty comfort dish that brings warmth and flavor to your dinner table.
In a large pot, bring 3 cups of vegetable broth to a boil over medium-high heat.
Add 1 cup of orzo to the boiling broth and cook for about 8-10 minutes until al dente, stirring occasionally.
While the orzo is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add 2 cloves of minced garlic to the skillet and sauté for about 1-2 minutes until fragrant.

Once the orzo is cooked, drain any excess broth and add the orzo to the skillet with the vegetables.
Stir in 2 cups of fresh spinach, and season with salt and pepper to taste. Cook for an additional 2-3 minutes until the spinach has wilted.
Remove from heat and stir in 1/2 cup of grated parmesan cheese until melted and well combined.
