Savor the rich flavors of this French classic, perfect for a cozy night in!
Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a skillet, melt the butter over medium heat and add the chopped mushrooms. Sauté for about 5 minutes until mushrooms are tender.
Add salt and pepper, stirring to combine, and cook for another 2 minutes. Remove from heat.
In a mixing bowl, whisk together the cream and grated cheese. Add a pinch of salt and pepper for extra flavor.
Divide the sautéed mushrooms into four ramekins. Carefully crack an egg into each ramekin on top of the mushrooms.
Pour the cream mixture over the eggs, covering them evenly.
Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. This will help the eggs cook gently.
Bake in preheated oven for about 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny. Keep an eye on them!
Once baked, remove from oven, and sprinkle chopped parsley on top for garnish.
Serve immediately and enjoy your delicious Oeufs Cocotte aux Champignons!
