A comforting twist on traditional enchiladas, these Spinach Turkey Enchiladas are sure to warm your heart and satisfy your cravings tonight!
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped onion and sauté for about 5 minutes until translucent.
Add 2 cloves of minced garlic and sauté for another minute until fragrant.
Add 1 pound of ground turkey to the skillet. Season with 1 teaspoon of cumin, salt, and pepper to taste. Cook until the turkey is browned, about 8 minutes.
Stir in 2 cups of fresh spinach and cook until wilted, about 2 to 3 minutes. Remove from heat.
In a baking dish, spread a thin layer of 1/2 cup of enchilada sauce on the bottom.
Take a corn tortilla, fill it with the turkey and spinach mixture, and roll it up. Place it seam-side down in the baking dish. Repeat with the remaining tortillas.
Pour the remaining enchilada sauce over the top of the filled tortillas, spreading it evenly. Sprinkle 1 cup of cheese over the top.
Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
Remove the foil and bake for an additional 10 to 15 minutes, until the cheese is melted and bubbly. Allow to cool slightly before serving.
