Begin by cutting the beef into thin strips. Dice the onion, bell pepper, jalapeño, and mushrooms into small pieces.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the onions and cook for about 3 minutes until translucent.
Add the sliced beef to the skillet and cook for about 5-6 minutes, stirring occasionally until browned.

In the same skillet, add another tablespoon of olive oil and place one flour tortilla in it. Sprinkle half of the cheese over the tortilla, add half of the beef and vegetable mixture, and then top with another half of cheese. Place another tortilla on top.
Cook the quesadilla for about 3-4 minutes on each side until it is golden brown and the cheese is melted.
Repeat with the remaining tortillas and filling.
Once done, remove from the skillet, cut into wedges, and serve warm with your favorite salsa or guacamole.
