Start by washing the bok choy thoroughly under running water to remove any dirt or grit. Pat dry with a clean towel.
Slice the bok choy in half lengthwise. Set aside.
Peel and finely chop the garlic. Peel and grate the ginger. Set both aside.
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
Once the oil is hot, add the garlic and ginger, stirring quickly to prevent burning. Cook for about 30 seconds until fragrant.
Immediately add the sliced bok choy to the skillet. Stir-fry for about 3 to 4 minutes until the greens begin to wilt but are still bright in color.
Pour in the soy sauce and sprinkle the salt and pepper. Continue stir-frying for another 1 to 2 minutes until the bok choy is tender but has a slight crunch.
Drizzle 1 teaspoon of sesame oil over the stir-fry for added flavor. Stir to combine.
Remove from heat and serve immediately.
