Start by preparing your pork chops. If they’re thick, you can cut them into smaller pieces for even cooking. This should take about 5 minutes.
Rinse the fermented black beans under cold water to remove excess salt and drain well.
Mince the garlic and ginger finely; this should take around 5 minutes.
In a bowl, combine the pork chops, minced garlic, minced ginger, fermented black beans, soy sauce, rice wine, and salt. Mix well. Let it marinate for at least 10 minutes while you prepare your steaming setup.
While it's marinating, fill a pot with water and bring it to a boil. Set your steamer on top. If you don’t have a steamer, you can use a heat-proof plate on top of a pot.
After marinating, place the pork mixture evenly on a plate that fits inside your steamer. Garnish with chopped green onion on top.
Once the water is boiling, place the steamer on top and cover. Steam the pork chops for 15 minutes. Following this, check if the pork is cooked through and tender.
Once done, carefully remove from the steamer. Let it rest for a couple of minutes before serving.
