Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
Wash the bell peppers, slice the tops off, and remove the seeds. Place them upright in a baking dish.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
Stir in the black beans, corn, cumin, salt, and pepper. Mix well and cook for another 5 minutes.
Add the tomato sauce and remove from heat. Stir in half of the cheddar cheese.
Stuff each bell pepper with the mixture and top with the remaining cheddar cheese.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
