Start by soaking the cashews in warm water for about 15 minutes to soften them.
While the cashews are soaking, bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente—usually about 10 minutes.
Drain the pasta once it’s cooked and set aside. Make sure to reserve a bit of pasta water in case you need it for the sauce.
In a blender, combine the soaked cashews, 1 cup of water, garlic cloves, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy. You might need to add more water if it's too thick.
In a large skillet over medium heat, add the olive oil. Once hot, pour in the cashew cream sauce and cook for about 5 minutes, stirring occasionally.
Add the cooked pasta to the skillet, and toss it in the creamy sauce. If the sauce is too thick, add a little bit of the reserved pasta water to reach your desired consistency.
Cook together for another 2-3 minutes to heat everything through.
