Remove from heat and stir in 1 beaten egg and 2 tablespoons of chopped parsley. Allow to cool slightly.
After the batter has rested, heat a non-stick skillet over medium heat and add a little olive oil to coat the bottom.
Pour a ladleful of batter into the skillet, swirling it to spread evenly. Cook until the edges start to lift, about 2-3 minutes.
Spoon some of the beef filling onto one half of the pancake, fold it over, and cook for another minute until golden brown.
Repeat this process with the remaining batter and filling, adding more olive oil to the skillet as necessary.
