Indulge in a comforting bowl of cheesy goodness with a burst of tangy tomato flavor, perfect for a cozy dinner tonight!
Start by boiling a large pot of water. Once it reaches a rolling boil, add a pinch of salt and then add the 200 grams of pasta. Cook according to package instructions, usually about 8-10 minutes until al dente.
While the pasta is cooking, prepare the sauce. In a pan, heat 2 tablespoons of olive oil over medium heat. Mince the 2 cloves of garlic and add them to the pan. Sauté for about 1-2 minutes until fragrant but not browned.
Pour in 1 cup of tomato sauce and stir well. Let it simmer for about 5-7 minutes on low heat, allowing the flavors to meld together. Add salt and pepper to taste.
Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta directly to the pan with the tomato sauce. Toss everything together on low heat for about 2-3 minutes, adding a splash of reserved pasta water if needed to loosen the sauce.
Remove the pan from heat and mix in 150 grams of mozzarella cheese until melted and creamy. Fold in freshly chopped basil for added flavor.
Serve hot, garnished with additional basil and a sprinkle of pepper on top.
