Indulge in the sweet tang of blackberry jelly that’s incredibly easy to make and perfect for your toast tonight!
Start by placing the blackberries and water into a saucepan over medium heat. Cook for about 10 minutes, stirring occasionally until the blackberries break down.
Once the mixture has thickened, use a fine mesh strainer to separate the juice from the seeds and pulp, ensuring you press firmly to extract as much juice as possible. You should have around 300ml of blackberry juice.
Return the juice to the saucepan and add in the sugar and lemon juice. Stir well and heat on medium until the sugar completely dissolves.
In a small bowl, sprinkle the gelatin over a few tablespoons of cold water and let it bloom for about 5 minutes.
Once bloomed, add the gelatin to the warm blackberry mixture and stir until fully dissolved. This process should take about 2 minutes.
Pour the jelly mixture into your desired containers and allow it to cool at room temperature for about 10 minutes.
Once cooled, transfer the jellies to the fridge to set for a minimum of 3-4 hours or until firm.
