Wash the zucchini and potatoes thoroughly. Slice the zucchini and potatoes into thin rounds, about 1/4 inch thick.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.
