This Cheesy Tofu Quesadilla is a delightful twist on a classic favorite, bringing delicious cheesy goodness and protein-rich tofu to your plate tonight!
Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes.
While the tofu is pressing, finely chop the bell pepper and onion.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, sautéing them for about 5 minutes until softened.
After pressing the tofu, crumble it into the sautéed vegetables, mixing everything carefully.
Sprinkle 1 teaspoon of cumin over the mixture. Season with salt and pepper to taste. Cook for an additional 5-7 minutes, allowing the tofu to absorb the flavors.
In a separate skillet, heat one tortilla over medium-low heat. Once warm, sprinkle 1/4 cup of cheese on one half of the tortilla, then add a portion of the tofu mixture over the cheese.
Carefully fold the tortilla in half, pressing it down gently. Cook for approximately 2-3 minutes until the bottom is golden brown and the cheese is melting.
Flip the quesadilla and cook for another 2-3 minutes on the other side.
Repeat this process with the remaining tortillas and filling.
Once all quesadillas are cooked, cut them into wedges and serve warm, optionally with salsa or guacamole.
