Start by heating 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to get hot but not smoking, which should take about 2 minutes.
Finely chop the onion and bell pepper while the oil is heating. Add the chopped onion to the skillet, sautéing it for about 5 minutes or until it turns translucent.
Next, add the minced garlic (2 cloves) and chopped bell pepper to the skillet. Cook for another 2-3 minutes until the peppers soften.
Add 1 pound of ground beef to the skillet, breaking it apart with a spatula. Cook for about 7-10 minutes, until the beef is browned and fully cooked. Drain any excess fat if necessary.
Once the beef is cooked, stir in 1 can of canned tomatoes, and season with 1 teaspoon of salt and 1 teaspoon of pepper. Let the mixture simmer for 5 minutes.
Reduce the heat to low and sprinkle 2 cups of cheddar cheese on top. Cover the skillet and allow the cheese to melt for about 3-5 minutes.
Once melted, remove from the heat and let it sit for a couple of minutes before serving.
