In a large pot, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chopped onion and cook until it becomes translucent, about 5 minutes.
Add the minced garlic and sauté for another 2 minutes until fragrant.
Pour in 1 liter of vegetable broth and bring it to a gentle simmer.
Add 100 grams of rice and allow it to cook for about 10 minutes.
Next, add 100 grams of pasta to the pot. Stir occasionally and let it cook according to the pasta's package instructions, usually around 10-12 minutes.
Once both the rice and pasta are tender, remove the pot from heat. Stir in 50 grams of chopped parsley and season with salt and pepper to taste.
