Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Add the chopped onion and minced garlic, and sauté for about 5 minutes until softened and fragrant.
Cut the chicken breast into bite-sized pieces and add them to the skillet. Season with salt and pepper. Cook for about 8 to 10 minutes, or until the chicken is cooked through.
While the chicken is cooking, wash and trim the Brussels sprouts. Halve them and set aside.
