Start by preparing your cooked rice. Use rice that has been cooled in the fridge for a day if possible, as it fries better.
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Stir in the kimchi and fry for about 2-3 minutes until heated through.
Add the cooked rice to the skillet, breaking up any clumps. Mix well with the kimchi and garlic mixture.
Pour in 2 tablespoons of soy sauce and 1 teaspoon of sesame oil. Stir everything together thoroughly to coat the rice.
Let the mixture cook for about 5-7 minutes, stirring occasionally, until the rice becomes slightly crispy.
In a separate pan, cook the egg sunny-side up in a little oil. This will be served on top of the finished fried rice.
Once the rice is crispy, remove from heat and garnish with chopped green onions and sesame seeds.
Serve the kimchi fried rice hot, topped with the fried egg.
