Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large skillet, brown 1 pound of ground beef over medium heat for about 5 to 7 minutes. Make sure to break it apart with a spatula as it cooks.
Once the beef is browned, drain any excess fat and add 1 chopped onion and 2 minced garlic cloves. Cook for an additional 3 to 5 minutes until the onion becomes translucent.
While the beef and onions are cooking, bring a pot of salted water to a boil and cook 8 ounces of egg noodles according to package instructions, usually around 6 to 8 minutes. Drain and set aside.
In a large mixing bowl, combine the cooked beef mixture, 1 can of cream of mushroom soup, 1/2 cup of milk, the drained egg noodles, and season with 1 teaspoon of salt and 1/2 teaspoon of pepper. Mix everything well until combined.
Transfer the mixture to a greased 9x13 inch casserole dish. Spread it out evenly.
Sprinkle 2 cups of shredded cheddar cheese on top of the mixture.
Bake in the preheated oven for 25 to 30 minutes, or until the cheese is bubbly and golden.
