Start by draining the canned tuna in a colander to remove excess liquid, about 1 minute.
In a large bowl, combine the drained tuna, mayonnaise, diced celery, finely chopped red onion, and diced dill pickle.
Add the mustard, salt, black pepper, and lemon juice to the mixture. Stir everything together until well combined, about 2 minutes.
Using green leaves of lettuce, lay them down as a base on each slice of bread.
Spoon the tuna mixture generously over the lettuce. Optionally, add another slice of bread on top to make a sandwich.
