Begin by washing the spinach thoroughly and set it aside to drain.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Allow the oil to shimmer slightly.
While the oil is heating, cut the chicken breast into bite-sized pieces and season with salt and black pepper.
Once the oil is hot, add the chicken pieces to the skillet. Cook for about 5–7 minutes or until the chicken is golden and cooked through, stirring occasionally to ensure even cooking.
While the chicken cooks, peel and finely chop the garlic.
After the chicken is cooked, add the chopped garlic to the skillet and sauté for 1–2 minutes, or until fragrant, being careful not to burn the garlic.
Next, add the spinach to the skillet. It may seem like a lot, but it will wilt down significantly. Stir the spinach in with the chicken and garlic.
Cook the spinach for about 3–5 minutes, stirring occasionally, until it has wilted down and reduced in volume. If needed, add a pinch more salt to taste.
Finally, squeeze the juice of one lemon over the dish just before serving, giving it a bright flavor.
