Start by finely dicing the onion, carrot, and celery. This will take about 5 minutes.
In a large pot over medium heat, add 2 tablespoons of olive oil. Once heated, add the diced onion, carrot, and celery. Sauté for about 5 minutes or until the vegetables are softened.
Mince the garlic cloves and add to the pot. Sauté for another minute until fragrant.
Pour in 4 cups of vegetable broth and bring to a boil.
Add 1 cup of orzo and 1 can of rinsed cannellini beans to the pot. Stir well and let it simmer for approximately 10 minutes, or until the orzo is cooked al dente.
