In a medium pot, heat 1 tablespoon of olive oil over medium heat.
Add the chopped onion and minced garlic to the pot, sautéing for about 5 minutes or until they turn golden and fragrant.
Add the rice to the pot, stirring for about 1 minute to toast it slightly in the oil.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot with a lid. Let it simmer for about 15 minutes or until the rice is tender and has absorbed most of the liquid.
While the rice is cooking, in a separate pan, heat the remaining olive oil over medium heat. Add the spinach and cook until wilted, about 3-4 minutes.
Once the rice is ready, remove it from heat and fluff it with a fork. Gently fold in the wilted spinach and cheese, mixing until the cheese is melted and everything is well combined.
