While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Dice 1 onion and mince 3 cloves of garlic. Add both to the skillet and sauté for 3-4 minutes until they are softened and fragrant.
Once the pasta is cooked, reserve 1 cup of pasta water, then drain the pasta and add it to the skillet with the onion and garlic.
Lower the heat and stir in 1 cup of sour cream, mixing thoroughly. If the sauce is too thick, add some reserved pasta water a little at a time until you reach the desired consistency.
