Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large mixing bowl, combine the 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt. Mix well to break any clumps.
In another bowl, whisk together 1 cup of milk, 1 egg, and 1/2 cup of melted butter until combined.
Pour the wet mixture into the dry ingredients and stir until just combined. Avoid over-mixing.
Fold in 1 cup of shredded cheddar cheese and 1 tablespoon of herbs of your choice.
Grease a loaf pan or line it with parchment paper. Pour the batter into the prepared pan, smoothing out the top.
Bake in the preheated oven for about 30 minutes, or until the top is golden brown and a toothpick comes out clean when inserted in the center.
