Warm up your evening with a delicious Pepperoni and Mushroom Pasta Bake that is comforting and satisfying!
Preheat your oven to 375° F (190° C).
Cook 2 cups of pasta in boiling salted water according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
Add 1 cup of sliced mushrooms and cook for 5-7 minutes until they're tender and browned.
Stir in 8 ounces of sliced pepperoni and cook for another 3 minutes.
In a large mixing bowl, combine the cooked pasta, mushroom and pepperoni mixture, and 2 cups of tomato sauce. Mix well and season with salt and pepper to taste.
Transfer the pasta mixture to a baking dish. Top with 1 cup of shredded mozzarella cheese and sprinkle with 1/2 cup of grated parmesan cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
