It’s a deliciously quick meal that brings the taste of Italy to your kitchen!
Start by boiling a large pot of salted water. Once boiling, add 200 grams of pasta and cook according to the package instructions, usually around 10–12 minutes.
While the pasta is cooking, heat 2 tablespoons of olive oil in a separate large skillet over medium heat.
Smash and finely chop 2 cloves of garlic, then add to the skillet. Sauté for about 1–2 minutes until fragrant but not browned.
Add 150 grams of spinach to the skillet and cook for 3–4 minutes until wilted.
Stir in 100 grams of sun-dried tomatoes and cook together with the spinach for another 2 minutes.
Once the pasta is ready, reserve about 1 cup of the pasta water, then drain the pasta and add it directly to the skillet.
If the mixture seems dry, add a bit of the reserved pasta water to help bind everything together.
Sprinkle with 50 grams of grated parmesan cheese, and season with salt and pepper to taste. Mix to combine all the ingredients evenly.
Serve warm, garnished with additional parmesan if desired.
