Start by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius).
Bring a large pot of salted water to a boil and add the penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Drain the pasta and set it aside.
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chicken breast and season with salt and black pepper. Cook the chicken for about 6-7 minutes on each side, or until it is no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before shredding it into bite-sized pieces.
In the same skillet, add the cream cheese and Buffalo sauce. Stir on medium-low heat until the cream cheese is melted and the sauce is well combined, about 3-4 minutes.
