Indulge tonight with a fresh and flavorful Greek classic that’s both easy to make and wonderfully satisfying!
Boil a large pot of salted water and add 250 grams of spaghetti. Cook according to package instructions until al dente, approximately 8-10 minutes.
While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 2 cloves of minced garlic and sauté for about 1 minute until fragrant.
Add 200 grams of spinach to the skillet, cooking until wilted, which should take about 3-5 minutes. Stir occasionally.
Once the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the remaining water and add the spaghetti to the skillet with spinach.
Crumble 150 grams of feta cheese over the spaghetti and spinach mixture. Stir until the feta starts to melt and combine with the pasta. If it seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
Season with 1 teaspoon of black pepper and salt to taste. Squeeze the juice of 1 lemon over the dish, mixing well to infuse the flavors.
Serve hot, garnished with additional lemon wedges if desired.
