Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a large pot, bring salted water to boil and cook the lasagna sheets according to package instructions for about 8 to 10 minutes. Drain and set aside.
While the pasta is cooking, heat olive oil over medium heat in a skillet. Add finely chopped onion and minced garlic, cooking until softened, about 4 minutes.
Add spinach to the skillet and cook until wilted, about 3 to 4 minutes. Remove from heat and let cool for a few minutes.
