There's nothing quite like a hearty Hash Brown Skillet to warm your heart and fill your tummy tonight!
Start by heating 2 tablespoons of olive oil in a large skillet over medium heat.
Add 3 cups of hash browns to the skillet and cook them for about 5-7 minutes, flipping occasionally, until they’re golden and crispy.
While the hash browns are cooking, dice 1 green bell pepper and 1 onion.
Once the hash browns are crispy, add the diced bell pepper and onion to the skillet. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir and cook for another 5 minutes until the vegetables are softened.
In a separate bowl, crack 4 eggs and whisk them until combined. Pour the eggs evenly over the hash brown mixture in the skillet.
Sprinkle 1 cup of shredded cheddar cheese on top, then cover the skillet with a lid and cook for about 5-7 minutes until the eggs are set and the cheese is melted.
Remove from heat and let it cool for a couple of minutes before serving.
