In a large mixing bowl, combine the ground beef, grated Parmesan cheese, minced garlic, finely chopped onion, egg, salt, and black pepper. Mix until well combined, but be careful not to overmix.
Divide the mixture into two equal portions and shape them into burger patties. Place them on a plate.
Heat olive oil in a grill pan over medium-high heat. Once hot, add the burger patties and cook for about 5 minutes on one side.
Flip the patties and cook for an additional 5-7 minutes on the other side, or until they reach your desired doneness.
While the burgers are cooking, slice the tomato and prepare the arugula.
Toast the burger buns lightly on another pan or in the oven if desired.
Once the burgers are cooked, assemble by spreading a tablespoon of mayonnaise on each half of the bun. Place the cooked patty on the bottom half, then top with sliced tomato and a handful of arugula. Place the top half of the bun over the toppings.
