Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes, until soft and translucent.
Remove the sausage from its casing and crumble it into the skillet with the onions. Cook for about 5 minutes until browned, stirring occasionally.
While the sausage cooks, crack 6 eggs into a large bowl. Add 1 teaspoon of salt and 1 teaspoon of pepper. Whisk until well combined.
Add the browned sausage and onion mixture to the egg mixture. Stir in 150 grams of cheese, reserving a little to sprinkle on top.
Pour the entire mixture back into the skillet, if oven-safe, or transfer it to a greased baking dish.
Sprinkle the reserved cheese on top, and place the skillet or baking dish in the preheated oven.
