instructions
    1

Start by rinsing 2 cups of rice under cold water until the water runs clear. Soak the rice for about 30 minutes, then drain.

    2

In a medium pot, add the soaked rice with 2.5 cups of water. Bring it to a boil, then reduce the heat to low, cover it, and let it cook for about 15 minutes or until the water is absorbed and rice is tender. Once done, remove it from heat and let it steam for another 10 minutes.

    3

While the rice is cooking, peel and slice the onion into thin wedges and finely chop the green onions and ginger.

    4

In a large skillet, heat 1 teaspoon of sesame oil over medium heat. Add the sliced onion and sauté for about 3-4 minutes until they become translucent.

    5

Next, add in the beef, using a spatula to break it apart. Cook until it starts to brown, about 5-7 minutes.

    6

In a bowl, whisk together 4 tablespoons of soy sauce, 2 tablespoons of mirin, and 1 tablespoon of sugar until dissolved. Pour this sauce over the beef and onion mixture.

    7

Then add the 200 milliliters of dashi stock and simmer everything together for about 10 minutes until the sauce has thickened slightly.

    8

Finally, to serve, place a generous scoop of rice in a bowl, top it with the beef and onion mixture, and garnish with green onions.
