Start by cleaning the crab and breaking it into pieces. If you're using live crab, make sure to handle them carefully.
In a bowl, mix the potato starch with a pinch of salt. Dredge each crab piece in the potato starch to coat it evenly.
Heat the vegetable oil in a large pan over medium-high heat. Once hot, carefully add the coated crab pieces and fry until crispy and golden, about 5-7 minutes. Make sure to turn them occasionally for even cooking.
While the crab is frying, prepare the sauce. In a bowl, combine gochujang, soy sauce, sugar, and sesame oil. Stir until well-mixed and set aside.
Remove the fried crab from the pan and place them on a paper towel to drain excess oil. In the same pan, lower the heat to medium and add minced garlic, grated ginger, and sliced onion.
Sauté for about 2-3 minutes until fragrant and softened. Then, add the fried crab back to the pan.
Pour the sauce over the crab and mix well to coat all the pieces. Cook for an additional 2-3 minutes, allowing the sauce to caramelize slightly.
Finally, sprinkle chopped green onion and black pepper on top for garnish. Stir gently for another minute.
Serve hot with steamed rice for a delightful meal experience!
