This hearty Black and Red Bean Chili will warm you up and fill you with comfort tonight!
Start by heating 1 tablespoon of olive oil in a pot over medium heat.
Dice the onion and bell pepper, and add them to the pot. Sauté for about 5 minutes until tender.
Mince the garlic and add it to the pot. Cook for an additional minute until fragrant.
Stir in 1 tablespoon of cumin and 2 tablespoons of chili powder, mixing well for about 1 minute to allow the spices to bloom.
Add the 1 can of red beans and 1 can of black beans (drained), along with 2 cups of vegetable broth. Stir everything together.
Bring the chili to a simmer, then reduce the heat to low. Allow it to cook for about 20 minutes, stirring occasionally.
Taste and season with salt and pepper as needed.
