Gnocchi di Mele (Apple Gnocchi) brings a sweet twist to traditional gnocchi and is a delightful way to combine comfort food with fruit!
Start by peeling and mashing the apples in a bowl until smooth. This should take about 5 minutes.
In another bowl, combine the mashed apples with sugar, egg, cinnamon, nutmeg, salt, and vanilla extract. Mix well for about 2 minutes until everything is combined.
Gradually add the flour into the apple mixture, kneading gently for about 5-10 minutes until a soft dough forms.
Once the dough is ready, divide it into small pieces and roll them into long ropes, about 1 cm thick. Cut them into small pieces, approximately 2 cm each.
As you prepare the gnocchi, bring a pot of salted water to a boil. Add the gnocchi in batches; they are done when they rise to the surface (typically in about 3-4 minutes).
In a separate pan, melt the butter over medium heat until it turns golden brown. This will take about 5 minutes.
Once the gnocchi are cooked, gently transfer them to the pan with the brown butter, tossing to coat for 2 minutes.
Serve warm, optionally garnishing with additional sugar or a sprinkle of cinnamon.
