Preheat your oven to 350°F (175°C).
In a skillet, heat 2 tablespoons of olive oil over medium heat.
Add 1 chopped onion and 1 chopped bell pepper to the skillet. Sauté them for about 5 minutes until softened.
Add 1 pound of ground turkey to the skillet. Cook until it's browned and no longer pink, which should take about 7 to 10 minutes.
In a large mixing bowl, combine the cooked turkey mixture with 2 cups of cooked rice, 4 eggs, and 1 cup of shredded cheddar cheese.
Season the mixture with 1 teaspoon of salt and 1 teaspoon of black pepper. Mix well until all ingredients are combined.
Transfer the mixture into a greased baking dish, spreading it evenly.
Bake in the preheated oven for 25 minutes, or until the top is golden and set.
Once done, let it cool for a few minutes before garnishing with 1/4 cup of chopped parsley.
Slice and serve warm!
