Start by seasoning the fish fillets with salt and pepper on both sides.
Heat a non-stick skillet over medium heat and add the butter, letting it melt and bubble gently.
Once the butter is hot, place the fish fillets in the skillet and cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove the fillets from the skillet and set them aside on a plate.
In a bowl, crack the eggs and whisk them together. Add a pinch of salt and pepper for seasoning.
In the same skillet, pour in the beaten eggs and reduce the heat to low. Gently stir the eggs with a spatula for about 2-3 minutes until they are softly scrambled, removing them from the heat just before they’re fully set.
