Add the diced chicken and cook for about 5-7 minutes, or until browned on all sides.
Chop the onion, bell pepper, and zucchini. Add these vegetables to the pan and sauté for another 5 minutes until softened.
Mince the garlic and stir it into the pan, cooking for 1 minute until fragrant.
Pour in the tomato puree and chicken broth and bring to a simmer. Add the paprika, saffron, salt, and pepper to taste.
Stir in the fideos and let it simmer for about 10-12 minutes, stirring occasionally, until the noodles absorb the liquid.
Once the fideos are cooked and have a nice, creamy texture, remove the pan from the heat and let it sit for 5 minutes.
Serve warm and drizzle with the remaining olive oil for extra flavor.
