Make tonight's dinner a fiesta with these quick and delicious Fajita Chicken Quesadillas—everyone will love them!
Start by slicing the chicken breast, bell pepper, and onion into thin strips.
In a skillet, heat 2 tablespoons of olive oil over medium-high heat for about 2 minutes.
Add the sliced chicken to the skillet and sprinkle the fajita seasoning over the top. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.
Next, add the sliced bell pepper and onion to the skillet and sauté everything together for another 4-5 minutes, until the veggies are softened.
Remove the skillet from heat and set aside the chicken-vegetable mixture.
In another skillet, place a tortilla and sprinkle a quarter cup of cheese on one half of the tortilla.
Spoon the chicken and vegetable mixture on top of the cheese, and then top with another quarter cup of cheese.
Fold the tortilla over to make a half-moon shape. Cook for about 2-3 minutes on each side, or until the tortilla is golden and the cheese is melted.
Repeat the process with the remaining tortillas and filling.
Once all quesadillas are cooked, cut them into wedges and serve hot!
