Begin by boiling a large pot of salted water. Once it reaches a rolling boil, add 250 grams of pasta and cook according to package instructions, usually about 8 - 10 minutes until al dente.
While the pasta is cooking, heat 2 tablespoons of olive oil in a large pan over medium heat. Add 1 chopped onion and sauté for about 3 - 4 minutes until translucent.
Add 2 minced garlic cloves and cook for another minute until fragrant.
Stir in 300 grams of corn (canned or frozen) and allow it to heat through for about 4 - 5 minutes.
Now add the 200 grams of sliced hearts of palm, and gently mix everything together. Cook for another 2 minutes.
Turn the heat to low and pour in 200 milliliters of cream. Stir to combine and let it simmer for about 3 minutes until slightly thickened. Season with salt and black pepper to taste.
Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it directly to the sauce in the pan. Toss to combine, adding some reserved pasta water if needed to loosen the sauce.
Finally, garnish with 1 tablespoon of chopped parsley before serving. Enjoy your creamy corn and hearts of palm pasta!
