This creamy Chicken and Broccoli Casserole is a comforting dish that combines flavors and nutrition, making it perfect for family dinners tonight!
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large pot, boil approximately 4 cups of water. Once boiling, add the cup of rice and cook according to package instructions until tender, about 15 minutes. Drain and set aside.
While the rice is cooking, chop the broccoli into small florets and cook in boiling water for about 3 minutes until bright green and slightly tender. Drain and set aside.
In a skillet over medium heat, add a small amount of oil. Dice the onion and garlic, then sauté them in the skillet until the onion is translucent, about 5 minutes.
In a large bowl, combine the cooked chicken (shredded or diced), cooked rice, broccoli, sautéed onion and garlic, cream of chicken soup, milk, salt, and pepper. Stir well to combine all ingredients.

Sprinkle the cheddar cheese over the top of the casserole.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
