This hearty Casseruola di Salsiccia e Formaggio is comfort food at its finest, bringing warm flavors to your table in no time!
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a large skillet over medium heat, cook 1 pound of Italian sausage for about 5 to 7 minutes until browned. Make sure to crumble the sausage as it cooks to ensure even browning.
Add 3 cloves of minced garlic to the skillet and sauté for an additional 1 to 2 minutes until fragrant.
Meanwhile, cook 12 ounces of rigatoni pasta in a large pot of boiling salted water for about 8 to 10 minutes or until al dente. Drain and set aside.
In a large bowl, combine the cooked sausage, garlic, rigatoni pasta, 15 ounces of ricotta cheese, 2 cups of marinara sauce, 1 teaspoon of black pepper, and half of the 2 cups of shredded mozzarella cheese. Mix everything together until well combined.
Transfer the mixture to a greased 9x13-inch baking dish. Top the casserole with the remaining 1 1/2 cups of mozzarella cheese and 1 cup of grated Parmesan cheese.
Cover with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 10 to 15 minutes or until the cheese is bubbly and golden.
Once done, remove from the oven and let it sit for about 5 minutes before garnishing with 1 cup of chopped parsley and serving.
