Bring a large pot of salted water to a boil. Add 250 grams of tagliatelle and cook for about 8 to 10 minutes until al dente. Stir occasionally to prevent sticking.
While the pasta cooks, heat 2 tablespoons of olive oil in a large pan over medium heat.
Add 2 cloves of minced garlic to the pan and sauté for about 1 to 2 minutes until fragrant, but not browned.
Add the 300 grams of washed spinach to the pan and sauté for another 3 to 4 minutes until wilted.
Once the tagliatelle is cooked, reserve 1 cup of the pasta cooking water, then drain the pasta.
Add the drained tagliatelle to the spinach mixture and toss well.
If it seems dry, add a bit of the reserved cooking water, about 1/4 cup at a time until the desired consistency is reached.
In a separate bowl, beat 2 eggs and combine with 50 grams of grated parmesan cheese. Season with salt and pepper to taste.
Remove the pan from heat and quickly stir in the egg and cheese mixture, allowing the residual heat to gently cook the eggs and create a creamy sauce.
Serve immediately with additional parmesan on top if desired.
